Notes
Bell's Two Hearted Ale is a highly regarded American IPA. This beer is known for using only Centennial hops.
This recipe is based upon an article authored by John Mallett in Zymurgy magazine, with input from David Curtis and Ryan Kramer of Bell's General Store. BYO magazine published a very similar recipe. The Bell's Store also has a clone kit available for sale.
The dry hopping process is critical. The recipe notes are to start dry hopping one week into fermentation for a one week period. Packaging processes that minimize oxygen exposure are beneficial for keeping hop flavors and aromas.
The closest yeast choice for Bell's cloning would be Imperial A62 - Bell's House Yeast. An alternative would be a neutral American ale yeast.
